Tres Leches Cupcakes
Ingredients:
Cupcake Mix:
French Vanilla cake mix
1 cup milk
⅓ cup vegetable oil
3 eggs
Tres Leches Mixture:
1 can evaporated milk
1 can sweetened condensed milk
2 cups Half & Half
Whipped Cream:
1 cup heavy whipping cream
¼ cup powdered sugar
½ tsp vanilla extract
Toppings (optional):
dulce de leche (caramel)
strawberries (sliced)
Instructions:
Cupcake Mix:
In a large bowl, combine the cake mix, milk, oil, and eggs.
Prepare a cupcake tray with tin foil liners (these are leak-proof).
Pour cake batter into cupcake liners.
Bake at 350 for 16 minutes.
Once done baking, allow the cupcakes to cool on the counter for 1 hour.
Once cooled, poke holes into cupcakes with a fork. (TIP: I cut off the tops of the cupcakes to get a flat top - this also helps the cake absorb the milk better!)
Tres Leches Mixture:
In a large bowl, combine evaporated milk, sweetened condensed milk, and half & half.
Pour about ¼ cup of mixture into each cooled cupcake. (TIP: I use a squeeze bottle for this!)
Refrigerate for 15 minutes.
Whipped Cream:
In a mixing, whip heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form (about 4-5 minutes).
Smooth out whipped cream with a spatula to release air bubbles.
Place whipped cream into a piping bag.
Decorate cupcakes with whipped cream and optional topping.
Serve and enjoy!
