Tres Leches Cupcakes


Ingredients:

Cupcake Mix:


Tres Leches Mixture:

  • 1 can evaporated milk

  • 1 can sweetened condensed milk

  • 2 cups Half & Half


Whipped Cream:

  • 1 cup heavy whipping cream

  • ¼ cup powdered sugar

  • ½ tsp vanilla extract


Toppings (optional):



Instructions:

Cupcake Mix:

  1. In a large bowl, combine the cake mix, milk, oil, and eggs.

  2. Prepare a cupcake tray with tin foil liners (these are leak-proof).

  3. Pour cake batter into cupcake liners.

  4. Bake at 350 for 16 minutes.

  5. Once done baking, allow the cupcakes to cool on the counter for 1 hour.

  6. Once cooled, poke holes into cupcakes with a fork. (TIP: I cut off the tops of the cupcakes to get a flat top - this also helps the cake absorb the milk better!)


Tres Leches Mixture:

  1. In a large bowl, combine evaporated milk, sweetened condensed milk, and half & half.

  2. Pour about ¼ cup of mixture into each cooled cupcake. (TIP: I use a squeeze bottle for this!)

  3. Refrigerate for 15 minutes.


Whipped Cream:

  1. In a mixing, whip heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form (about 4-5 minutes).

  2. Smooth out whipped cream with a spatula to release air bubbles.

  3. Place whipped cream into a piping bag.

  4. Decorate cupcakes with whipped cream and optional topping.

  5. Serve and enjoy!
