Mazapan Cookies


 Ingredients:

  • ½ cup butter (softened)

  • ½ cup light brown sugar

  • ¼ cup granulated sugar

  • 1 tsp vanilla extract

  • 1 egg + 1 egg yolk

  • 3.4 oz. cheesecake pudding mix 

  • 1 ¼ cup all-purpose flour

  • ½ tsp baking powder

  • ½ tsp salt

  • ¾ cup white chocolate chips

  • 6 mazapans (crushed)


Instructions:

  1. In a large bowl, cream together the butter and sugars until light and fluffy.

  2. Add in the vanilla extract and eggs. Mix until combined.

  3. Add in the pudding mix, flour, salt, baking powder, salt, chocolate chips, and crushed mazapans.

  4. Using a cookie scoop, scoop out cookie dough balls and place them on a baking sheet

  5. Refrigerate cookie dough balls for 30 minutes. (This is optional but will make your cookies have a better texture.)

  6. Once done chilling, place cookie dough balls onto a baking sheet and top with additional chocolate chips and crushed mazapan. 

  7. Bake at 350 for 16 minutes.

  8. Once out of the oven, allow the cookies to set for 5-10 minutes.

  9. Serve and enjoy!
