Mazapan Cookies

  Ingredients : ½ cup butter (softened) ½ cup light brown sugar ¼ cup granulated sugar 1 tsp vanilla extract 1 egg + 1 egg yolk 3.4 oz. cheesecake pudding mix   1 ¼ cup all-purpose flour ½ tsp baking powder ½ tsp salt ¾ cup white chocolate chips 6 mazapans (crushed) Instructions : In a large bowl, cream together the butter and sugars until light and fluffy. Add in the vanilla extract and eggs. Mix until combined. Add in the pudding mix, flour, salt, baking powder, salt, chocolate chips, and crushed mazapans. Using a cookie scoop, scoop out cookie dough balls and place them on a baking sheet Refrigerate cookie dough balls for 30 minutes. (This is optional but will make your cookies have a better texture.) Once done chilling, place cookie dough balls onto a baking sheet and top with additional chocolate chips and crushed mazapan.  Bake at 350 for 16 minutes. Chocolate Chip Cookies

Ingredients : ½ cup butter (softened) ½ cup light brown sugar ¼ cup granulated sugar 1 egg 2 tsp vanilla extract 1 ½ cup all-purpose flour ¼ tsp baking powder ½ tsp baking soda ¼ tsp salt 1 ½ cup chocolate chips Instructions : In a large bowl, cream together the butter and sugars until light and fluffy. Add in the egg and vanilla extract. Mix until combined. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry mixture to the wet ingredients and fold together just until combined. Fold in the chocolate chips and/or chunks. Using a cookie scoop, scoop out cookie dough balls and place them on a baking sheet Refrigerate cookie dough balls for 30 minutes. (This is optional but will make your cookies have a better texture.) Mexican Banana Bread

Ingredients : Bread: 3 ripe bananas 2 eggs ½ cup butter (melted) ½ cup light brown sugar ½ cup granulated sugar ½ cup milk 1 tsp vanilla extract 1 ½ cup all-purpose flour 1 tsp baking soda 1 tsp baking powder ¼ tsp salt ¼ tsp cinnamon Toppings (optional): bananas nuts (pecans, walnuts, etc.) chocolate chips Instructions : In a large bowl, mash three bananas (the more ripe the bananas are, the more sweeter the bread will be!). To the bowl, add the eggs, butter, and sugars. Mix until combined. Add the milk, vanilla extract, flour, baking soda, baking powder, and cinnamon. Mix until everything is well incorporated. The batter may be lumpy. Pour the batter into a loaf pan and top with desired toppings. Bake at 355 for 45-50 minutes. Cool for 15 minutes before slicing. Serve and enjoy! Tres Leches Cupcakes

Ingredients : Cupcake Mix: French Vanilla cake mix 1 cup milk ⅓ cup vegetable oil 3 eggs Tres Leches Mixture: 1 can evaporated milk 1 can sweetened condensed milk 2 cups Half & Half Whipped Cream: 1 cup heavy whipping cream ¼ cup powdered sugar ½ tsp vanilla extract Toppings (optional): dulce de leche (caramel) strawberries (sliced) Shop Ingredients with Instacart Instructions : Cupcake Mix: In a large bowl, combine the cake mix, milk, oil, and eggs. Prepare a cupcake tray with tin foil liners (these are leak-proof). Pour cake batter into cupcake liners. Bake at 350 for 16 minutes. Once done baking, allow the cupcakes to cool on the counter for 1 hour. Once cooled, poke holes into cupcakes with a fork. ( TIP : I cut off the tops of the cupcakes to get a flat top - this also helps the cake absorb the milk better!) Ingredients : Flan Mixture: 5 eggs 1 can evaporated milk 1 can sweetened condensed milk 4 oz. cream cheese (optional, but will make your flan more creamy) 1 tbsp vanilla extract dulce de leche Cake Mix: Super Moist Triple Chocolate Fudge Cake Mix 1 cup milk ½ cup vegetable oil 3 eggs Instructions : Flan Mixture: Blend evaporated milk, sweetened condensed milk, eggs, and vanilla extract in a blender for 30 seconds. Prepare a cupcake mold with some cooking spray. Spread some dulce de leche on the bottom of each cupcake mold. Pour about ¼ cup of flan mixture over the dulce de leche and cover the cupcake mold with aluminum foil. Bake at 350 for 30 minutes in a hot water bath (baño Maria). Once out of the oven, the flan is only partially cooked. Cake mix: In a large bowl, combine the cake mix, milk, oil, and eggs. Pour a spoon of cake batter over each piece of flan.
